Kartik's culinary narrative at NOMI in Pwllheli, North Wales, weaves through his childhood in a small Indian village, where he closely observed his grandfather and the community coming together for celebratory communal cooking. His unexpected transition to becoming a chef in 2020 was a leap of faith born out of necessity. One of Kartik's fundamental culinary beliefs is the importance of achieving a delicate balance of flavors in Indian cuisine, a principle he has brought to NOMI in a unique way. He introduced a menu that diverges from the traditional curry house offerings in North Wales, offering innovative and heartfelt dishes that have garnered appreciation from patrons, making NOMI a standout dining experience in the region.
In addition to his culinary skills, Kartik has cultivated a special interest in wines, completing the Wine & Spirit Education Trust (WSET) Level 2. This qualification underscores his dedication to understanding and pairing wines, enhancing the dining experience at NOMI. His ability to match the perfect wine with his dishes adds an extra layer of sophistication to the restaurant's offerings.
Before diving into the culinary arts, Kartik's career in the hospitality industry was marked by significant roles and experiences, including serving as a Front Office Manager and Restaurant Manager. His journey through these positions, especially with globally recognised brands like the Ritz-Carlton, Four Seasons, Waldorf Astoria,  Royal Caribbean Cruises, and The Stratford in London provided him with a comprehensive understanding of guest service and operational management. 
Kartik's role at NOMI reflects a unique fusion of his broad hospitality experience with culinary artistry and wine knowledge. His background in prestigious hospitality roles enhances his chef capabilities, allowing him to blend exceptional service and operational expertise with his culinary skills. This combination ensures that every dining experience at NOMI is marked by delicious food, impeccable service, and thoughtfully selected wines, creating a memorable and comprehensive culinary experience for each guest.
